production day
So..today early in the morning we are given the competencies of the requirements we have to do in bread class in order to pass that class..we have productions breads which means thats breads is a must bake to have that class pass...
the production breads are :
1. Baquette
2. Danish
3. Ballons
4. Levains
5. Focaccia
So what chef made us do is that..she will be rotating us every week..So last week I had indra and erika as my group and today I had patricia and Christian as a group..the left right corner bench is baquette's group, and the left bottom corner will be doing the danish, following the top left corner are the ballons group which is us today and the right top corner is levains people following with the top would be the focaccia group. She said we will have the same group for 4 days and then she will change again after that..same goes with the breads..ballons for 4 days and then Done! baquette for 4 days and then graded.. After finish making all those breads above, we will be making our projects breads..which is what we will be making everyday after we finish doing our production breads and Mis En Place for the next day..Talking about Mis En Place..the thing I like about this chef is that..she made us prepare our Mis En Place onde day before we come to class...unlike in cake class, what we will be making today we have to do the mis en place first...so it's like so rush.
Making the ballons is fun today...I like dividing the dough into pieces using the machine..so FUN...and of course putting and choosing the topping for the ballons is too much fun to do..Chef never cares what we want to add for the topping..HAHAHA
So I grabbed basil, cinamon sugar, chili corn pepper, herbs everything that has in the spices rack...i grabbed them all and placed them on my table...that case I just have to choose which one i want to use for the ballons toppings...
I have like 5 trays of ballons...so what i did was...half of the ballons I topped with cheese and paprika...which then i called chilli corn ballons..and then the other half i topped it with cinammon sugar...HAHAHA..the others are just plain..and some of them I made them topped into just cheese for the topping...so FUN...
I wonder what I wanna add for the topping tomorrow...Christie requested ealier in class that tomorrow..she wants to have ballons with just granulated sugar for the topping...I was like...Oh sure..I will bake them for you..5 dollars. Hahahaha.
Our class is so much fun..We exchanged things we make today..LIke earlier, christie gave me their focaccia masterpiece..and then I gave people my ballons too..Baquettes and levains are jjust too common..guess because they dont have toppings...and they dont get to be topped..and they are plain breads...many people are just sick of eating it...cos last week we were all like eating and baking baquettes and levains everyday..and we ate them everyday too..Thats why when Alberto was aking people
"who want to have my levains?" everybody was just ignoring him saying no...cos we had too much levains already last week.
HHAHAHA...but for focaccia and ballons they are different..They get to be topped...Im so happy i get to make them again tomorrow until thursday...and then on friday we will be changing our production breads and group again...
AHHAAHA..making the danish is time consuming...im scared though..in fact it is the hardest one among all..
Guess thats it for today...I had my fun in kitchen..so happy..I hope tomorrow will be even better..cos tomorrow i will be the one who mix the ballons dough..HAHAHAĆ„
